Turbot: The Predator That Only Looks Up

Thirty-eight times this series has been about the plane a predator hunts in: zander on the edge, catfish in the murk, swordfish over the deep. Always the plane the fish itself swims in. The turbot breaks that. It lies in the sand and hunts the water above it. After metamorphosis both eyes sit on the same side of the head and point upwards; its entire hunting ground is the cone of water above it, where every prey item stands as a silhouette against the surface light. It cannot see downwards — and it does not need to. From which follows the single most useful sentence in this article, and it contradicts what most people do on a sand beach: a bait lying flat on the bottom is in the one place a turbot cannot ambush. ⚠️ Scophthalmus maximus (GBIF 2409418, family Scophthalmidae, order Pleuronectiformes; still listed as *Psetta maxima* in many registers and legal texts) is not a brill. And you separate the two with your finger, not your eye: the turbot’s eyed side carries no scales but large bony tubercles — FishBase writes "eye side without scales but with large bony tubercles", the Danish official schedule gives the same as an identifying mark, "Oversiden har ingen skæl, men mange benknuder", and describes the brill in direct contrast as "Oversiden har dog skæl og føles glat". A second mark from the same source: on a turbot the lateral line is strongly arched over the pectoral fin. One pass of your palm across the back settles the question.

Where it lies

On sand — but not on just any sand. FishBase gives the species a depth range of 20 to 70 metres, describes it as demersal, and puts adults on sandy, rocky or mixed bottoms, adding explicitly "rather common in brackish waters". That one clause explains why the Baltic is turbot country rather than a fluke: the range runs, per FishBase, across the north-east Atlantic and the whole Mediterranean, up the European coasts to the Arctic Circle, and takes in most of the Baltic Sea; the Black Sea holds the subspecies *Psetta maxima maeotica*. So the place you actually meet one is rarely the featureless sand desert and almost always the seam: the line where sand meets a stone field, the gutter behind a bar, the transition from pale ground to dark weed, the drop-off of a channel. That is where small fish travel, and that is where a fish that buries itself and waits will be. Two things follow. First, a turbot is an ambush predator with no ambush spot in the usual sense — it carries its own cover, a few tail-beats of sand over the back, which makes it invisible at any point along that seam. Second, because it brings its own cover, no rock and no weed on the chart gives it away. What gives it away is the prey above it.

Why it only looks up

Because it was not born a flatfish — it became one. FishBase records the ontogeny plainly and it is remarkable anyway: "Larvae are initially symmetric but, at the end of the metamorphosis (day 40-50, 25 mm), the right eye moves to the left side" — the larva hatches at 2.7 to 3.1 millimetres from an egg of barely one millimetre, swims upright at first like any other fish, and somewhere between the fortieth and fiftieth day of its life, at about 25 millimetres, the right eye travels across the skull to the left side. After that the fish lies down on its right flank, and what used to be "right" is now "down". From that day its world is one-sided: it looks up, with both eyes, from cover. What it is looking for is in the same source: it feeds mainly on other bottom-living fishes — sand-eels, gobies — and only to a lesser extent on larger crustaceans and bivalves. That is the second sentence you often hear differently on the beach. A turbot is a fish predator, not a worm collector. A fresh fish strip, a sand-eel, a slim skin-on sliver that flutters in the tide is its prey image; a ball of lugworm is not. And because it looks upward, success is decided not by whether the bait smells good but by whether it sits above the fish and moves. Spawning falls, per FishBase, between April and August (February to April in the Mediterranean, May to July in the Atlantic); it is a batch spawner with pelagic eggs — so there is no nest to protect, but it does sit differently and shallower in that season than "20 to 70 metres" suggests.

What that means for the bait

  • The bait belongs above the bottom, not on it: that is the whole lesson of this article in one sentence. A buoyant element right above the hook — a bead, a small foam head, a section of floating sand-eel — lifts the strip a hand to two hands above the sand. That is exactly where it sits in the field of view of a fish looking up with both eyes, and exactly where it stands as a silhouette against the light. Lying on the sand, the same bait is effectively invisible to the same fish.
  • Movement beats scent: this is an ambushing sight-hunter, not a scent-tracker like a moray. A bait that flutters in the current, a rig drifted slowly across the seam, a natural bait on a moving trace — that produces the movement overhead its whole body plan is waiting for. A bait laid down motionless asks the fish to come and check; it has no reason to.
  • Fish, not worm: FishBase names bottom-living fishes, sand-eels and gobies first among its food. A slim skin-on fish strip, a sand-eel, a small soft plastic worked just off the bottom hit the prey image. Crustaceans and bivalves are explicitly the lesser part in that same source.
  • The bite is a blow from below, not a series of taps: it launches vertically out of the sand, takes, and settles back down. At the rod that does not arrive as a rattle but as one single hard knock with often nothing after it — because the fish is already lying down again. Wait for it to "develop" and you miss it. Strike on the knock.
  • Feel first, measure second: before you reach for the tape, run your palm across the eyed side. Large bony tubercles and a strongly arched lateral line over the pectoral = turbot. Smooth and scaled = brill. This is not pedantry for identification guides: in some waters the two carry different rules, and you cannot keep the right one if you think you are holding the other fish.

And because flatfish in particular get measured by feel, here is the paperwork as written rather than as remembered. Denmark (official schedule "Mindstemål og fredningstid for fisk i saltvand", fiskepleje.dk / DTU Aqua): pighvar/turbot — minimum size 30 cm in the Belts and the Baltic, 32.5 cm in the inner Flensburg Fjord; on the closed season it says explicitly "Gælder kun erhvervsfiskeri", so it applies to commercial fishing only. Brill in the same waters is likewise 30 cm, "Fredning - ingen". Schleswig-Holstein (minimum-size and closed-season table of the state angling federation, dated 28 March 2025, for the coastal waters): turbot 30 cm, closed season 1 June to 31 July in the Baltic — currently suspended; brill identical. ⚠️ Permits may be stricter than the regulation, and where they are, the permit governs. Turkey (6/2 recreational circular no. 2024/21, Official Gazette of 11 Aug 2024, no. 32629, valid 1 Sept 2024 to 31 Aug 2028): the kalkan does not appear in the Çizelge tables of the amateur circular at all — it therefore falls under "other species" and under the blanket rule that for species limited by weight the catch may not exceed five kilograms, single species or mixed. ⚠️ The 45 centimetres that circulates in Turkish tables for kalkan is not in that amateur circular, so we do not assert it here as an amateur minimum size. Croatia: the species is not on the Crveni popis morskih riba, and the per-piece list in Pravilnik NN 48/2026 (article 11(4)) covers octopus, groupers, Eunice roussaei and sharks and rays — not the romb; no figure is claimed for it here. ⚠️ One number, however, is set by no legislature, and it is the important one: FishBase gives length at first maturity as 40.8 cm (range 41 to 54 cm). A turbot at the minimum size has therefore never spawned. That is not a rule, it is arithmetic — and the reason a fish that is legal at 30 centimetres can still be a poor choice for the box. For scale: the species reaches 100 cm and 25 kg, lives up to 25 years, and sits on the IUCN Red List as Least Concern (assessed 7 Dec 2020). To humans it is explicitly "harmless" — nothing here bites back and nothing stings.

Not the spot — the height

With this predator it is not about finding the right seam, it is about how high your bait sits above it.
